16th – 18th October: Sexy Fish London
Guest Chef: Mattia Ricci
Restaurant: Sexy Fish, Berkeley Square
Originally from Italy, Mattia has spent the past 15 years refining his craft in some of London’s most prestigious kitchens, including Sexy Fish, Annabel’s and Zuma. His cooking is defined by precision, bold flavour and a deep respect for exceptional ingredients; a balance of technical finesse and creativity that shapes his work at Sexy Fish. As one of the world’s most recognisable Japanese‑inspired dining destinations, Sexy Fish blends culinary excellence with contemporary art and high‑energy atmosphere across its global locations in London, Miami, Manchester and Dubai. Its menu centres around sushi, sashimi, seafood and premium cuts cooked over a traditional Robata grill, supported by an innovative cocktail programme and immersive design. HIDE is one of London’s most acclaimed modern restaurants, known for elegant, ingredient‑led cooking and an exceptional wine programme. Awarded a Michelin star within months of opening, it has become synonymous with thoughtful hospitality, technical finesse and one of the most impressive wine lists in the country. Matthew Mawtus, its long‑standing General Manager and sommelier by trade, brings a classically minded, narrative‑driven approach to pairing, rooted in deep technical knowledge and an instinct for wines with character, meaning and story.
What to Expect: Hosted by Matthew Mawtus, this evening explores standout vintages from 2007 and 2008, curated with the insight of a seasoned sommelier and hospitality leader. 27-29th November: Adam Smith, Coworth Park

Adam Smith is one of the UK’s leading modern British chefs, known for an ethos where “taste is king” and a style that blends classical technique with exceptional British produce and contemporary refinement. His career spans formative years at The Ritz, rising to executive sous chef and winning the Roux Scholarship, followed by senior roles at The Devonshire Arms and, since 2016, Coworth Park. His accolades include a Michelin star retained since 2018, five AA Rosettes, Master of Culinary Arts and national recognition across the GQ Food & Drink Awards, Great British Menu and the Hotel Cateys.
Woven by Adam Smith, his Michelin‑starred restaurant at Coworth Park, reflects this philosophy in full: refined, understated dishes that reimagine familiar flavours with precision, creativity and restraint. Day One – Arrival & Introduction
Settle into your sea‑view room with early check‑in before joining Guy Owen and our guest culinary personalities, for a Champagne & Canapés reception. The evening continues with a refined tasting menu at the Reef Knot Restaurant, setting the tone for the immersive experience ahead.
Day Two – Behind the Scenes
Begin the day with a supplier‑led tasting, from boutique vineyards to artisan gin producers, offering insight into the craft behind the series. After an afternoon at leisure, return for the Autumn Chef Series Dinner, complete with wine flight.
Day Three – A Gentle Departure
Enjoy a leisurely breakfast overlooking the harbour before departing with late checkout.
