Provenance is central to who we are. Our “Buy Local” philosophy supports small‑scale Cornish producers who share our values and celebrate the richness of the region. We work with farmers, fishers and growers who prioritise sustainability, biodiversity and long‑term stewardship of the land and sea.

Recycling & Waste Management
We take a thoughtful, responsible approach to waste. Everything that can be recycled is — from tins and cardboard to plastics and even our cooking oil.
To minimise emissions, we use a recycled electric milk float to collect waste from the hotel, reducing vehicle impact and supporting a cleaner village environment.
We continually refine our kitchen waste processes, improving segregation and reducing food waste through careful menu planning, portion control and close collaboration with our suppliers.
Water Conservation
Water is a precious resource, and we use it carefully.
- Our linen and towel change policy empowers guests to choose when they would like fresh items, reducing laundry by over 5% in the past year.
- We do not use tablecloths during lunch service at The Idle Rocks or at any service at the St Mawes Hotel, reducing water and energy consumption.
- All taps, showers and toilets are fitted with aerators, dual‑flush systems and small cisterns to minimise water use without compromising comfort.
Saving Energy
Heritage buildings can be energy‑intensive, so we monitor consumption closely and review usage annually to identify opportunities for improvement.
- We are phasing out all halogen bulbs in favour of energy‑efficient LEDs.
- Guests are encouraged to make greener choices through our electric vehicle charging point.
- We serve Cornish filtered still and sparkling water in reusable bottles, reducing transport miles and single‑use waste.
These small, consistent actions contribute to a meaningful long‑term reduction in our environmental footprint.
Engaging with Our Local Community

We actively recruit against our sustainability principles and values, seeking like‑minded people who share our philosophy of responsible hospitality. This is especially true in our kitchen, where provenance, seasonality and low‑impact cooking guide daily practice.
We are proud of the diversity within our team — in background, experience and culture — and we are committed to fostering local talent. Around 15% of our team currently comes from St Mawes and wider Cornwall, and we are working to grow this number through:
- Apprenticeships with Truro College
- On‑the‑job training and formal qualifications
- WSET training for team members at all levels
- Supplier visits, helping staff understand the craft behind Cornish produce, from vineyards to dairies to tea growers
We are passionate about inspiring the next generation to appreciate Cornish ingredients, ecosystems and culinary heritage. Alongside our work with St Mawes Primary School, we support Truro High School through fundraising dinners for their “Green Space at School” initiative, with more partnerships planned.
